The Surumeika (dried squid) landed at Akasaki Port in the San'in region is a premium product. Thoroughly toughened by the rough winter waves of the Sea of Japan, it develops thick, meaty flesh. For this kōji marinade, we carefully select only the freshest squid, suitable for sashimi, and dry it to preserve its natural sweetness.

The kōji used is pure rice kōji, handcrafted by a traditional kōji maker in a downtown shop. From soy sauce and kelp to chili peppers, we ensure the marinade is infused with the distinctive tastes of this port town. Our unique pickling process produces a tender yet firm texture, making it easy for anyone to enjoy. It's perfect as a snack with drinks or as a companion to rice!
