Kokera Sushi
Kokera Sushi is a taste of Hiruzen's, a hometown signature dish.
The name Kokera Sushi comes from its resemblance to the shape of a Kokera, a wood chip produced when carving wood with a hatchet.
A handful of sushi rice and Shime-saba (pickled mackerel) are placed on a bamboo leaf and weighted down in a tub overnight.
It is a festival feast that has been made in every household since ancient times.
